Natural processing:

This process starts with harvesting, where only the 100% wine-red grains are harvested. After the harvesting process, the coffee is taken to a shaded hut where any damaged beans are sorted out and the sorted beans are dried in the courtyard. When the crop has reached 12%, it is placed in bags and stored in the cellar, ready to be prepared for use and transported to its destination.

COMSA history:

COMSA is a coffee growers' association in the Marcala region of La Paz, Honduras, which aims to achieve economic, social and environmental goals as a strategy to reduce poverty and promote sustainable development.

COMSA has 1 556 partners in permanent training, with an innovative approach and a commitment to the community.

It was founded in 2001 with 7 thousand Lempira social capital. It was an initiative of a group of producers and was created with the support of the Foundation for Rural Development (FUNDER) with 61 coffee producers (12 women and 49 men). Over the years and because of the dynamism of the work, COMSA has become a business model for Honduras. When the 61 partners formed COMSA in 2001, they did so with the aim of becoming a company that promotes and promotes organic agriculture, in addition to coffee quality. At the time, the predominant production in the region was a traditional system dependent on agro-toxins. By offering organic and quality coffee, COMSA entered the international markets, regaining the trust of customers in coffee and Honduran producers. COMSA's consolidation in the market allows it to be certified, guaranteeing the quality of the coffee, the environmental practices and the social investments that the company makes in its producers and in the Marcala community.

Marcala is a municipality in La Paz department, Honduras, Central America. It is located about 100 kilometres west of Tegucigalpa. It lies on a plain surrounded by mountains, bordering the Republic of El Salvador to the south. It is bordered to the north by the municipalities of La Esperanza and Intibucá, by the department of Intibucá, to the south by the Republic of El Salvador, to the east by the municipalities of Santa Ana, Opatoro, Chinacla, San José and Cabañas, and to the west by the municipality of Yarula. Marcala is famous for its landscape and its unique climate, which make its coffee a connoisseur's favourite.
