Mario Porfirio Gámez is the third generation of the family to dedicate his life to coffee growing, a tradition started by his grandfather in 1930. Mario has watched his grandfather and father on the farm since he was a little boy, he became a partner of COMSA in 2014 and with the support of COMSA he started to implement organic farming, he also started to work with the 5M life plan, which he has been applying to the needs of the soil and coffee plants, to produce in a sustainable and environmentally friendly way.Mario Porfirio Gámez decided to take all this knowledge further in 1980 with the practices he learned with his grandfather and father. He started growing coffee, which allowed him to develop a processing process on his own farm, taking advantage of the raw materials, from roasting to drying. This encourages him to experiment with each harvest season with the aim of gradually improving the coffee profile.Mario Porfirio works with his wife and children at El Encanto farm, who follow the same passion and tradition of making quality coffee that he learned from his grandfather and father. At El Encanto Farm, they practice environmentally friendly farming practices and also plant fruit trees.Quality processing begins with harvesting the crop at its optimum ripening point. Afterwards, damaged grains are sorted out using a shaded sieve. After ensuring that only healthy beans remain, the beans are mashed and, depending on the weather, left in the fermentation heap for about 8 hours to reach the desired fermentation. The beans are then washed and dried in a solar dryer, where they remain until they reach the desired moisture content of 12%. The time spent in the solar dryer depends on weather conditions, usually 9-12 days. Marcala is a municipality in the department of La Paz, Honduras, Central America. It is located about 100 kilometres west of Tegucigalpa. It lies on a plain surrounded by mountains, bordering the Republic of El Salvador to the south. It is bordered to the north by the municipalities of La Esperanza and Intibucá, by the department of Intibucá, to the south by the Republic of El Salvador, to the east by the municipalities of Santa Ana, Opatoro, Chinacla, San José and Cabañas, and to the west by the municipality of Yarula. Marcala is famous for its landscape and its unique climate, which make its coffee a connoisseur's favourite.
