Sidamo is the main coffee producing region of Ethiopia. Its coffee is so highly valued in international markets that its exports account for 60% of foreign exchange earnings to Ethiopia. The Sidamo region is located in southern Ethiopia, 6 hours from the Kenyan border. It is named after a group of people from the south-eastern part of the country. These coffees grow in the shade of forest trees and are hand-picked. Heleanna Georgalis has been the company's manager since 2008 and is immersed in the third wave of coffee, personally controlling the quality of the coffee she exports. She is carrying on her father's legacy and says she loves this world where she can experiment with the processes herself and feel good about her results. It is important to point out that the uniqueness of Ethiopian coffee lies in the fact that the coffee plants are not genetically modified. There are thousands of undiscovered varieties in Ethiopia and the known ones remain untouched, and Heleanna emphasises this every time she talks about it. Ethiopia is the cradle of coffee, with varieties from all regions, and scientists have discovered 37 varieties, 34 of which are natural. We often find that Ethiopian coffee comes from the Heirloom variety, which means 'old root', not defining the variety itself, but rather a general one. The variety is named after the area where it is grown and where it has been growing for many years. These coffees have a flavour typical of the growing area.
